I can only talk about Paris and Amsterdam... Paris: Eiffel Tower of course, Pompidou centre, musee d'Orsay, l'ile st Louis. For craft go to la droguerie (near les Halles) but they are a bit rude, you've been warned. Amsterdam, the Anne frank museum, the diamond museum make the canal boat trip - probably worth it. There is also a church in a house! I cannot remember but it was prettying impressive.. Let me know if you are looking for something specific!
