Found at the Willowbridge Slow Food Market. Best eaten like this. Planning to bribe a Brazilian person to make the right cheese.

Don't you just love those containers! And guava is such a mysterious flavor!
I tried to find my way around Latin AMerican cheeses recently, trying to find a better cheese for cheese enchiladas - one of my favorite foods. Whatever I had in my childhood (I'm from southwest Texas), they don't make any more. I doubt it was very "gourmet"!

I grew up eating "guayaba" (guava). We had a guave tree in our garden and used to go out and take them just before fully ripe. In Costa Rica we have guava paste candy covered with chocolate, guava marmalade for bread and my mother makes "casquitos de guayaba"... she takes the seeds out and cooks the shells with sugar syrup, and when done you eat it with soft cheese or ice cream. Need to get you some guava chocolates!!!

I have never hear of guava marmalade. Sounds amazing because I love guavas!

Is that guava paste? My family usually eats it on top of Ritz crackers if you'd like to try it that way ...

On Monday I had guava volcano, which is like a petit gateau but with guava instead of chocolate. I can´t even begin to describe it because I´m salivating already.

And for the cheese? Hmm, thank goodness my friend from Rio is visiting next week!
